Asam Pedas Melaka II

Slursppsss...as I type the title for this dish..ASAM PEDAS MELAKA...the only word I can say is SEDAPPPPP....this is another version of asam pedas melaka that I have tried...memang terasa kelainan nya...when I scooped my rice, I 'mandikan' my nasi with the kuah!!!then scooped some on another bowl and sip the gravy!!!...so sedap..with the fish yang fresh ooooooh!!! I used garoupa(ikan kerapu)...hingga menjilat jari...still salivating now...hehe


Bahan2 kisar:-Blended Ingredients:-
1 biji bawang besar-(large onion)
5 biji bawang merah-( shallots)
30 tangkai cili kering-( dried chilli)
2 cm halia-(ginger)
1 sudu besar jintan manis-( tbsp fennel powder)
1 sudu teh lada hitam-( tsp black pepper)
3 cm kunyit hidup (atau 2 sudu teh kunyit serbuk)-( fresh turmeric roots or 2 tsp turmeric powder)
3 ulas bawang putih-(garlics)

Bahan Tumis:- Saute Ingredients:-1 biji bawang besar (dihiris)-( large onion sliced thinly)
½ sudu teh biji sawi-( tsp mustard seeds)
½ sudu teh halba-(tsp fenugreek)
4 tangkai daun kari (ambil daunnya saja)-(sprigs curry leaves)


1 sudu besar pes asam jawa (campurkan dengan 1 cawan air)-( tbsp tamarind pulp +1 cup water)
750 ml (3 cawan) air-( 3 cups water)
2 biji tomato (potong 2 atau 4)-(tomatoes quartered)
2 batang terung kecil (belah 4 memanjang)-(small brinjal)-I didnt put cause no stock
8-10 biji bendi (saya tk taruk sbb stok takde)-(ladies fingers)- I didnt put cause no stock
2 tangkai bunga kantan - dipecahkan-(saya letak daun kesum aje)(red ginger plant bud crushed- I substitute laksa leaves instead)- I didnt put cause no stock
2 sudu teh garam (atau secukup rasa)-( salt to taste)
½ sudu teh serbuk perasa atau 1 sudu teh gula-(msg to taste)
1 kg ikan duri/tenggiri (atau apa-apa ikan pun boleh-saya gunakan ikan kerapu)-(any kinds of fish) -I used Grouper Fish
2/3 cawan (abt 150 -180 ml) minyak masak-( cooking oil)


Cara:- Method:-
Panaskan minyak dalam periuk. Tumis bahan tumis sehingga bawangnya layu dan naik baunya. Masukkan bahan kisar dan tumis lagi hingga garing dan wangi. Masukkan air asam jawa dan kacau sebentar hingga naik minyak. Masukkan ikan, bunga kantan(daun kesum) dan air. Kacau rata dan masukkan pula serbuk perasa/gula, terung dan bendi. Tutup dan biarkan renih pada api kecil hingga kuahnya pekat sedikit. Kemudian, masukkan tomato. Biarkan sebentar sebelum dimatikan api.-(Heat oil and stir fry saute ingredients till fragrant. Add in blended ingredients and let it till oil rises up the surface. Add in tamarind juice and stir. Add in fishes, red ginger plant bud/laksa leaves and water. Stir well and add in msg/sugar, brinjal and ladies fingers. Cover and let it simmer using the low heat till the gravy thickens a bit. Lastly add in tomatoes. Let it a while before turn off heat.)
